This week's recipe

Green Garlic Spaghetti


1 lb Spaghetti
1/3 Cup Extra Virgin Olive Oil
4 Stalks Green Garlic (tough dark green leaves trimmed), thinly sliced
1 Tablespoon fresh Parsley, chopped
Red Pepper Flakes to taste
Parmesan Cheese for garnish


Instructions:
Cook spaghetti until al dente, reserving 1 cup of pasta cooking water before draining.
Heat the olive oil in a large saucepan over add the garlic, parsley, red pepper flakes, and 1/4 cup of water. Cover and sweat, stirring occasionally, until soft, adding more water if necessary to keep the garlic from caramelizing too much.
Add the cooked pasta to the garlic mixture and toss well to combine. Add some pasta cooking water if necessary to bring the dish to a creamy consistency. Serve with more olive oil, minced tops of the green garlic and parmesan cheese.

New vendor to the Ashburn Farmers Market, Martin's Angus Beef (The Plains, VA), was selling a special product last week--customers who bought his meat are eating beef from the same steer that was served to President Obama by The Jefferson Hotel Restaurant last Wednesday. Martin's sells their 30-day aged Angus to restaurants for the same price you get at the Market. Since 1980, Bill Martin has been managing and growing his own herd of Angus, where he has carefully selected the breeding to ensure a quality beef product. Careful Bull selection has been made based on ability to produce marbling and texture required in a fine piece of beef found in quality restaurants. to providing healthy, flavorful, high quality Angus beef to you and your entire family. Another bonus is that Martin's sells fresh (limited amount of frozen) meat and they are able to provide you with a variety of cuts from the tongue to the tail.

Ben and Jackson Babst are not the usual type of vendor you are used to seeing at the Leesburg Farmers Market. These two teenage brothers from Round Hill, VA, are the bakers for Brother's Olde-fashioned Bakery, specializing in gluten-free and allergen aware products that taste like normal baked goods. Be sure to check out their offerings starting this Saturday!

Go for the Green Garlic!

Green garlic is garlic which has been harvested before the outer skin has become papery--essentially, "baby" garlic. The flavor of green garlic is still garlicky, but milder than mature garlic with less of a bitter bite. When cooked, the green garlic sweetens, giving a new layer of depth to a dish. The whole plant-leaves, scapes and bulb--can be used raw or cooked in a wide assortment of cuisines.

Things to do with raw green garlic: mince and add to salads, pound into a paste to make green garlic aioli, use in salad dressings, sprinkle onto any recipe using bread or noodles with cheese.

Things to do with cooked green garlic: poach the last 4" of the tips and dress with a mustard vinaigrette, dice and saute the tender portions and add to an omelet or frittata, chop and add to stir frys, chop and add to soup.

You can roast green garlic (after removing roots and dark green tops) by placing the stalks on aluminum foil, sprinkling with olive oil (perhaps adding salt, pepper and some chopped herbs of choice); close up the foil and bake at 375 degrees until tender--about 45 minutes. Serve with bread or crackers.

After habitat destruction, the biggest threat to birds are domesticated cats. Most vets recommend keeping cats indoors because of risks such as cars and disease. Keeping dogs on leashes when outside also helps protect local wildlife.

Feed Your Pets Natural or Organic Pet Foods and Treats
Most conventional pet foods are made with processed animal by-products and fillers--some of which has been deemed unsuitable for humans. Natural and organic pet foods are minimally processed and contain meats that are raised sustainably. Certified-organic pet foods must meet strict USDA standards that ensure no pesticides, hormones, antibiotics, artificial preservatives or artificial ingredients go into your pet’s bowl--or belly.

Put Number Two in Its Place
When walking your dog, please pick up with a biodegradable poop bag so your dog’s waste doesn’t live in a landfill taking up to 100 years to decompose. Cat owners should steer clear of clumping clay litters-the clay is strip-mined and contains carcinogenic silica dust that your cat can ingest.

Get a “Recycled” Pet — Adopt From a Shelter
Don't forget one of the best things you can do is to purchase a "recycled pet.” Please consider going to a local shelter or rescue to choose your next animal companion.
